Evening Sous Chef

WHO WE ARE  The Calgary Petroleum Club – The Premier Club for Calgary Business.
Join our prestigious private members Club, renowned for its exceptional culinary experiences and inclusive atmosphere. Our Club offers three distinct dining experiences: breakfast, lunch, and dinner, each served from our three active kitchens. Additionally, we provide a full active catering menu for our members' events and special occasions.  We are seeking a talented and dedicated evening Sous Chef to join our dynamic team and contribute to our high standards of food quality and service.
 
Position Description
The Sous Chef is a vital member of our culinary team, and will be responsible for assisting the Executive Chef to maintain culinary operations of 3 kitchens.  The Sous Chef will lead hands-on delegations while playing a key role in delivering an exceptional dining experience for Club members and guests.
 
Culinary Leadership
  • Assist the Executive Chef in planning, preparing and executing all food at all service outlets. This includes but is not limited to à la carte service, breakfast, lunch and dinner as well as special events, catering and banquets.
  • Ensure consistent quality, presentation and portion control of all menus.
  • Oversee and lead in preparation of cooking food, ensuring safety and sanitation guidelines.
  • Demonstrate strong culinary techniques and knowledge of various cuisines, classic, contemporary and has seasonal awareness.
  • Hands on cooking during peak service hours.
  • Maintain a high level of creativity and innovation in presentation and offering.
 
Kitchen Management Operations & Staff Training
  • Supervise and train kitchen staff on proper food handling, preparation and sanitation procedures.
  • Assist with implementation of new systems and procedures.
  • Adhere to all company policies, procedures and values.
  • Adapt and overcome any and all unexpected issues (last minute functions, changes in numbers, short prep items, order shortages, staff calling in sick, etc.).
  • Maintain food safety and sanitation, through industry-leading food safety protocols.
  • Lead the day-to-day operations of the kitchens, through an active presence on the floor, leading your team to deliver service excellence.
  • Leadership and conflict resolution skills, coaching, counselling, and disciplining employees.
  • Foster an inclusive work environment for all employees.
  • Assist in hiring and participate in the onboarding of new colleagues.
  • Train and lead the culinary team, ensuring they have the skills, training, and tools to deliver exceptional culinary experiences.
 
 
Member & Guest Relations
  • Interact with members and guests to address dietary restrictions, special requests and feedback
  • Ensure that all food service operations meet or exceed member and guest expectations.
  • Collaborate with the front of house team to ensure seamless service and communications.
  • In the absence of Executive Chef, the Sous Chef is expected to address any member or guest promptly and professionally.
Your Experience & Skills Include
  • Minimum of 5-years progressive experience in banquet/restaurant leadership roles.
  • Food Safe training.
  • Red Seal or equivalent certification.
  • Proven ability to work in a fast-paced, customer service driven environment.
  • Well-rounded food background.
  • Computer literacy, including effective working skills with MS Word, Excel, e-mail and internet navigation.
  • A team player with the ability to train, coach, build relationships, and motivate employees.
  • Practical understanding of productivity and labour cost.
  • Versed in the calculation of food cost; experience with conducting food inventories and understanding inventory turnover.
  • Understanding of safe work practices and initiatives to reduce or eliminate accidents.
  • Proven ability to drive revenue and profit, without compromising the experience of colleagues and customers.
  • Strong interpersonal and problem-solving abilities.
  • Ability to physically perform the duties of the Sous Chef.
  • Catering experience is an asset.
